Instructions

  1. Roast the Sweet Potatoes
    1. Preheat your oven to 425 °F (220 °C). Toss the diced sweet potatoes with olive oil, salt, pepper, garlic powder, and red pepper flakes.
    2.  Spread them out on a sheet pan and roast 20–25 minutes, flipping halfway, until they’re lightly crisp on the outside and tender inside.
  2. Cook the Beef
    1. In a skillet over medium-high heat, cook the ground beef until browned.
    2. Add the taco seasoning, minced garlic, and a pinch of salt + pepper.
    3. Stir to combine and let it heat through for 6–8 minutes.
    4. If it seems dry, add a splash of water so the seasoning coats the beef evenly.
  3. Prep Your Toppings
