Ingredients (Serves 4–6)

  • 6 large eggs
  • 3 medium Yukon Gold potatoes, peeled + thinly sliced
  • 1 medium yellow onion, thinly sliced
  • ¾ cup olive oil
  • Salt, to taste

Instructions

  1. Cook Potatoes + Onions:
    1. Heat olive oil in a nonstick skillet over medium.
      1. Add potatoes and onions, season with salt, and cook gently for 15–20 minutes until soft but not browned.
  2. Whisk Eggs: 
    1. In a large CaliBowl, whisk eggs with a pinch of salt.
  3. Combine:
    1. Use a slotted spoon to transfer the potatoes and onions to the eggs. Gently fold to coat.
  4. Cook the Tortilla: 
    1. Remove excess oil from the skillet (leave about 1 tbsp).
    2. Pour in the mixture.
    3. Cook on medium-low for 5–7 minutes until the edges set.
  5. Flip + Finish: 
    1. Place a plate over the pan, flip the tortilla onto the plate, and slide it back in.
    2. Cook 3–4 minutes until fully set.
  6. Rest + Serve: 
    1. Let cool slightly before slicing. Serve warm or at room temperature.
